i have a little recipe for You. Its perfect for lunch or added to a pasta dinner. All you need is a bunch of cherry or plum tomatoes! I used some cherry tomatoes that i got cheap cus they were a bit soft and over ripe -which is good for this recipe.
After cleaning the tomatoes you just put them in the oven with olive oil and things like lemon juice, white wine vinegar or balsamic vinegar and some salt. this is an improvised recipe so try adding other stuff like maybe garlic or some herbs as you like. I set the oven at 130 celcius but i some times get impatient and turn it up -burning the tomatoes a bit more- or patient and turn it down.
Let it sit in the oven until there are lots of juices and it is golden in top. Now you can separate the tomatoes and the fluids into two pans and put both back in the oven. At the end you will have a lovely tomato-olive oil and baked cherry tomatoes -I then put the tomato-olive oil on some ciabatta bread and roasted it on a frying pan and ate it with the baked cherry tomatoes, black Turkish olives and parmesan cheese. mmm....
the cherries were dessert :)
